- Capturing the beauty of winter on a plate.
Seasonal ingredients that signal the arrival of winter are presented with rich flavors and textures. Dishes feature wild Shinshu venison and boar-pig hybrid, paired with foie gras and ceps mushrooms, followed by cauliflower. Prawns and sole are served with Amela tomato jam and spinach. The bread is a walnut and mixed-grain pain de campagne, long-fermented to bring out flavor and aroma. Desserts include chocolate terrine and Jersey milk gelato with orange sauce.

Starting with simmered napa cabbage wrapped with yuba and topped with sea urchin and white shrimp, followed by sashimi, grilled crab paste in crab shell, and steamed egg custard with white turnip in six-sided slices. Grilled wagyu sirloin sandwiched with seared ankimo is a showstopper.
